Rachaels Tofu Chili Cheese Squares
Tofu Chili Cheese Squares
- 3 eggs
- 3/4 lbs. soft tofu
- 3/4 tsp salt
- 1 lb cheddar cheese, grated
- 1 can (4 oz) chopped green chili, drained
- grated parmesan cheese
- paprika
Mix the eggs, tofu and salt in a blender until smooth. Transfer to a large bowl and mix in the cheddar cheese and the green chili. Spread evenly in an oiled 9”x13” pan. Sprinkle with parmesan cheese and paprika. Bake at 350 for 30-35 minutes.
